Little known fact about me: I LOVE THE SLOW COOKER!
First thing Monday morning I threw this pork roast into the slow cooker and let my culinary imagination take the lead! I decided to create my own healthy version of barbecue sauce, which looked like this:
Now why do I love the slow cooker so much? Well it is the perfect way to have food prepared and ready to be served in the evening, and best of all it keeps me from making the excuse that I just do not have time to make anything to eat after work (I don't get home until 6pm most nights)! If you are a busy person and are trying to make time for more healthy eating I would highly suggest heading to your local mall and picking up one of these wonderful tools!

- 1 tsp of black strap molasses
- 1 onion diced
- 2 tsp of apple butter (I use a locally made apple butter)
- 1/2 cup of water

Now to today's main topic- Why the Whole 30 challenge proved to be more difficult than I had planned. Well, it was just that I had not truly planned out what I planned to eat! Which is a big no-no when making changes in our diets. If we do not have a plan in place it becomes so very easy to fall back into our old habits and give up on our goals.
My biggest struggle was that between 4-6 pm (when I am driving home from work) I found my sugars getting low and I felt completely sluggish. I often have some nuts and fruit in my car, but I never really wanted to eat these things in these moments, I wanted all the sugar and carbs I could get my hands on! WELL, after doing some research this weekend I realized, this is a common occurrence among newbies of the Whole 30 diet and the paleo diet. What I was missing was fats in my first meal (breakfast)! One of the key suggestions I am coming across is avocado, which I am not a huge fan of, but with some added creativity and research I am sure I can find a way to enjoy it!

As I mentioned, last week I have begun physiotherapy for my foot and have been assigned a set of exercises to do each day in hopes of helping my foot to properly heal. The good news: She thinks I will be able to do Berlin! I am hoping to hear the same news when I go to the foot specialist on June 17th, so everybody keep their fingers crossed!
After tonight's supper (which I ate most of before remembering to take a picture) of chicken sausage, salad, and sauteed vegetables, I have a renewed faith that I can do the Whole 30 program. Tomorrow I will spend time preparing meals for the week and ensuring that I have a wide range of healthy snacks available to me in order to avoid that afternoon crash!
This weeks goals- create healthy breakfast that don't always consist of eggs; enjoy food and eat intuitively; and most importantly, love myself and all of my struggles!
